Dinner and a Poll

Ok, first an easy dinner: spicy Italian sausage with zucchini noodles (zoodles really but come on that’s kind of a ridiculous term) is my own recipe. It’s easy – 15 minutes! – and delicious. See below for shopping list and super informal abbreviated recipe (because who has time to read long ass instructions and steps? Amirite??)

The one thing that made this delicious dinner possible is the wonderful Paw Patrol series on Nick Jr. My son loves reading – that’s actually a real passion of his. But TV was my babysitter while I made dinner – and I’m ok with that. We all watched sooooo much Tv growing up but now there’s a certain limit for each age group and so many rules. Rules and American Academy of Pediatrics aside (man would I love to host a cocktail party with those people and get them loaded and see what they really think about all these “recommendations”)… how much Tv do you let your kids watch??

Almost forgot the how-to on the food.

Shopping list-

1.spicy Italian sausage (could use mild, could use chicken sausage, could use anything like that but I prefer spicy)

2. Mushrooms – but them precut and save yourself the trouble. I bought sliced baby portabellas and chopped them quickly myself

3. Onion – I used white but you can use red. I buy them pre-chopped bc I cry my eyes out every damn time I try to chop a whole one. I cry enough as it is – no one including my husband needs to see even more tears from me.

4. Tomato sauce – be a martyr and make your own from scratch or buy from the store. I like Classico or whatever is front and center and easy to grab from my pantry.

5. Zucchini noodles – don’t even try to tell me you enjoy using your spiralizer. Just buy them already like that, throw them in a pan and there you have it.

Sauté sausage in pan, drain and discard oil and set sausage aside. Add some garlic and onions to same pan with some olive oil, add mushrooms and zucchini noodles and cook until all soft but not soggy. Add tomato sauce and sausage to pan and sauté another 5 minutes or so. Don’t forget as many fresh herbs or the dried ones – doesn’t matter just as long as you season and salt/pepper as you go. Enjoy!
